Stay Up All Night Cookies / Potato Flake Cookies

Stay Up All Night Cookies (No, not the baker)

Makes 2-3 dozen

2 egg whites at room temperature
2/3 cup sugar
Pinch of salt
1/2 teaspoon vanilla flavoring
6 ounce bag of semi-swet chocolate chips
1/2 - 1 cup pecans
Green food coloring (optional)
Red sprinkles (optional)

Preheat oven to 375 degrees. Beat egg whites in mixer until they form stiff peaks (approximately 7 minutes). Add sugar gradually. Add salt and vanilla. Beat until these ingredients peak. If you choose to make the cookies festive, add the green food coloring. If not, they will turn out white. Fold in the chocolate chips (do not beat them). Grease cookie sheet. Place teaspoon size mixture on cookie sheet. Top with optional sprinkles. Turn the oven off and place the cookies in the oven. Leave them there overnight.

Potato Flake Cookies

1 cup sugar
1 egg
1 stick margarine
1 teaspoon coconut flavoring
1 package (1 1/2 cup) instant flake potatos
1 package (1 1/2 cup) biscuit mix

Mix all ingredients. Add two tablespoons of milk if too thick. Spoon onto cookie sheet with help of a knife. Bake at 350 degrees until very light brown.
